- For the Beef:
- 1 lb ground beef lean, 85% or higher
- 1 tbsp olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 tbsp taco seasoning
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup water
- For the Cilantro-Lime Rice:
- 1 cup long-grain white rice
- 2 cups water
- ½ tsp salt
- 1 tbsp lime juice fresh
- 2 tbsp chopped fresh cilantro
- For the Toppings:
- 1 cup canned black beans rinsed and drained
- 1 cup corn kernels canned or frozen, thawed
- 1 avocado diced
- ½ cup diced tomatoes
- ½ cup shredded cheddar cheese
- ¼ cup sour cream or Greek yogurt
- ¼ cup salsa
- For Garnish Optional:
- 2 tbsp chopped fresh cilantro
- Lime wedges
Bring water and salt to a boil in a saucepan. Add rice, cover, and simmer for 15-20 minutes; stir in lime juice and cilantro.
Heat olive oil in a skillet over medium heat. Cook beef, onion, garlic, taco seasoning, salt, and pepper for 6-8 minutes until browned.
Add water to beef and simmer for 2-3 minutes until sauce thickens. Drain excess fat.
Rinse beans, thaw corn, and dice avocado and tomatoes. Set out cheese, sour cream, and salsa.
Divide rice among four bowls. Top with beef, beans, corn, avocado, tomatoes, cheese, and sour cream or salsa.
Garnish with cilantro and lime wedges. Serve warm with chips or a salad.
