Ingredients
  

  • For the Beef:
  • 1 lb ground beef lean, 85% or higher
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp taco seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup water
  • For the Cilantro-Lime Rice:
  • 1 cup long-grain white rice
  • 2 cups water
  • ½ tsp salt
  • 1 tbsp lime juice fresh
  • 2 tbsp chopped fresh cilantro
  • For the Toppings:
  • 1 cup canned black beans rinsed and drained
  • 1 cup corn kernels canned or frozen, thawed
  • 1 avocado diced
  • ½ cup diced tomatoes
  • ½ cup shredded cheddar cheese
  • ¼ cup sour cream or Greek yogurt
  • ¼ cup salsa
  • For Garnish Optional:
  • 2 tbsp chopped fresh cilantro
  • Lime wedges

Instructions
 

  • Bring water and salt to a boil in a saucepan. Add rice, cover, and simmer for 15-20 minutes; stir in lime juice and cilantro.
  • Heat olive oil in a skillet over medium heat. Cook beef, onion, garlic, taco seasoning, salt, and pepper for 6-8 minutes until browned.
  • Add water to beef and simmer for 2-3 minutes until sauce thickens. Drain excess fat.
  • Rinse beans, thaw corn, and dice avocado and tomatoes. Set out cheese, sour cream, and salsa.
  • Divide rice among four bowls. Top with beef, beans, corn, avocado, tomatoes, cheese, and sour cream or salsa.
  • Garnish with cilantro and lime wedges. Serve warm with chips or a salad.
