Ingredients
  

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 3-4 tbsp ice water

For the Apple Filling:

  • 2 medium apples Granny Smith or Honeycrisp, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

For the Caramel Topping:

  • 1/2 cup store-bought caramel sauce or homemade
  • 1/4 tsp sea salt optional

For Garnish (Optional):

  • 1 tbsp chopped pecans
  • 1 tsp powdered sugar
  • 1 tbsp caramel drizzle

Instructions
 

  • Whisk flour, salt, and sugar. Cut in butter until crumbs form. Add ice water until dough holds. Chill for 30 minutes.
  • Toss apples with sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla.
  • Preheat oven to 375°F; grease a 12-cup muffin tin.
  • Roll out dough to 1/8-inch thickness; cut 12 (3.5-inch) circles. Press into muffin cups.
  • Spoon apple filling into crust cups, filling to the top.
  • Bake for 20-25 minutes until golden. Cool in tin for 10 minutes; transfer to a rack.
  • Drizzle with caramel sauce and sea salt. Garnish with pecans, powdered sugar, and extra caramel. Serve warm or at room temperature.
