For the Nachos:
- 1 bag 10 oz tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 oz salami thinly sliced
- 4 oz prosciutto torn into pieces
- 1/4 cup crumbled blue cheese
- 1/4 cup sliced pickled jalapeños
- 1/4 cup sliced black olives
- 1/4 cup diced cherry tomatoes
- 2 tbsp sliced cornichons small pickles
- 1/4 cup sour cream
For Garnish (Optional):
- 2 tbsp chopped fresh chives
- 1 tbsp chopped fresh parsley
- 1 tsp red pepper flakes
Preheat oven to 400°F; line a baking sheet with parchment or foil.
Spread half the tortilla chips on the baking sheet. Sprinkle with half the cheddar and mozzarella.
Layer salami, prosciutto, jalapeños, olives, tomatoes, and cornichons. Top with remaining cheeses and blue cheese.
Bake for 8-10 minutes until cheeses are melted.
Drizzle with sour cream; garnish with chives, parsley, and red pepper flakes.
Serve immediately on the baking sheet or a platter.
