For the Cookies:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar packed
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup crushed peppermint candies optional
For Garnish (Optional):
- 2 tbsp crushed peppermint candies
- 1/4 cup melted dark chocolate for drizzling
- 1/4 tsp sea salt
Preheat oven to 350°F; line a baking sheet with parchment paper or grease lightly.
Whisk flour, cocoa powder, baking soda, and salt in a medium bowl.
Beat butter, granulated sugar, and brown sugar in a large bowl until fluffy. Add egg, vanilla extract, and peppermint extract; beat until combined.
Gradually add dry ingredients to wet; mix until just combined. Fold in chocolate chips and peppermint candies.
Scoop tablespoon-sized dough balls; place 2 inches apart on the baking sheet.
Bake for 10-12 minutes until edges are set. Cool on the sheet for 5 minutes; transfer to a wire rack. Drizzle with melted chocolate, sprinkle with peppermint candies and sea salt. Serve warm or at room temperature.
