Chicken Alfredo Monkey Bread

Ingredients
  

For the Chicken Filling:

  • 1 lb boneless skinless chicken breast, diced
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

For the Alfredo Sauce:

  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

For the Monkey Bread:

  • 2 16 oz cans refrigerated biscuit dough (16 biscuits)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1 tbsp olive oil for brushing

For Garnish (Optional):

  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil
  • Extra Parmesan cheese

Instructions
 

  • Melt 2 tbsp butter in a skillet over medium; cook garlic and chicken for 5-7 minutes (165°F). Season with salt and pepper; cool slightly.
  • In the skillet, melt 2 tbsp butter; cook garlic for 1 minute. Add cream, Parmesan, salt, and pepper; simmer 3-4 minutes.
  • Preheat oven to 350°F; grease a 10-inch bundt pan. Cut biscuits into quarters and flatten slightly.
  • Toss biscuit pieces with chicken, Alfredo sauce, mozzarella, Parmesan, and Italian seasoning. Layer in the bundt pan.
  • Brush with olive oil; bake for 25-30 minutes until golden. Cool for 5 minutes, then invert onto a plate.
  • Garnish with parsley, basil, and Parmesan. Serve hot.
