For the Marinade:
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 1 tbsp lime zest
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 cloves garlic minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp honey
For the Chicken:
- 4 boneless skinless chicken breasts (6-8 oz each)
- 1 tbsp olive oil for grilling
For Garnish (Optional):
- 2 tbsp chopped fresh cilantro
- 1 lime cut into wedges
Whisk olive oil, lime juice, zest, chili powder, cumin, paprika, garlic, salt, pepper, and honey. Marinate chicken in a bag or dish for 30 minutes to 2 hours in the fridge.
Preheat grill to 400°F; brush grates with 1 tbsp olive oil.
Pat chicken dry; grill 6-8 minutes per side until 165°F. Rest 5 minutes.
Garnish with cilantro and lime wedges. Serve hot.
