Ingredients
  

For the Quiche:

  • 1 cup low-fat cottage cheese
  • 2 cups fresh spinach chopped
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 cup diced onion
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg optional

For Garnish (Optional):

  • 2 tbsp fresh parsley chopped
  • 1 tbsp green onions sliced

Instructions
 

  • Preheat oven to 375°F; grease an 8-inch pie dish with cooking spray or olive oil.
  • Heat olive oil in a skillet over medium heat; sauté onion, garlic, and spinach for 3-4 minutes until wilted.
  • Whisk eggs, cottage cheese, thyme, salt, pepper, and nutmeg in a large bowl; stir in cheddar and parmesan.
  • Add sautéed spinach, onion, and garlic to the egg mixture; pour into the pie dish.
  • Bake for 25-30 minutes until set and lightly golden; cool for 5 minutes.
  • Slice into wedges; sprinkle with parsley and green onions, if desired, and serve.
