For the Quiche:
- 1 cup low-fat cottage cheese
- 2 cups fresh spinach chopped
- 6 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated parmesan cheese
- 1/2 cup diced onion
- 1 clove garlic minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg optional
For Garnish (Optional):
- 2 tbsp fresh parsley chopped
- 1 tbsp green onions sliced
Preheat oven to 375°F; grease an 8-inch pie dish with cooking spray or olive oil.
Heat olive oil in a skillet over medium heat; sauté onion, garlic, and spinach for 3-4 minutes until wilted.
Whisk eggs, cottage cheese, thyme, salt, pepper, and nutmeg in a large bowl; stir in cheddar and parmesan.
Add sautéed spinach, onion, and garlic to the egg mixture; pour into the pie dish.
Bake for 25-30 minutes until set and lightly golden; cool for 5 minutes.
Slice into wedges; sprinkle with parsley and green onions, if desired, and serve.
