Ingredients
  

For the Wedges:

  • 2 large sweet potatoes about 1.5 lbs, cut into wedges
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika optional

For Garnish (Optional):

  • Fresh parsley chopped
  • Extra Parmesan cheese
  • Red pepper flakes

Instructions
 

  • Preheat oven to 425°F. Cut sweet potatoes into wedges; soak in cold water 15 minutes, then pat dry.
  • Toss wedges with olive oil, Parmesan, garlic powder, Italian seasoning, salt, pepper, and paprika.
  • Place on a preheated, parchment-lined baking sheet in a single layer. Bake 25-30 minutes, flipping halfway, until golden.
  • Garnish with parsley, Parmesan, or red pepper flakes. Serve hot.
