For the Wedges:

large sweet potatoes
about 1.5 lbs, cut into wedges

olive oil

grated Parmesan cheese

Instructions
Preheat oven to 425°F. Cut sweet potatoes into wedges; soak in cold water 15 minutes, then pat dry.
Toss wedges with olive oil, Parmesan, garlic powder, Italian seasoning, salt, pepper, and paprika.
Place on a preheated, parchment-lined baking sheet in a single layer. Bake 25-30 minutes, flipping halfway, until golden.
Garnish with parsley, Parmesan, or red pepper flakes. Serve hot.
