Ingredients
  

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1/4 tsp kosher salt

For the Peach Filling:

  • 4-5 ripe peaches peeled, pitted, and sliced (about 4 cups)
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

For the Streusel Topping:

  • 3/4 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/3 cup packed brown sugar
  • 1/4 cup unsalted butter cold and cubed
  • 1/4 tsp kosher salt

For Garnish (Optional):

  • Powdered sugar dusting
  • Whipped cream

Instructions
 

  • Preheat oven to 350°F. Line 8x8-inch pan with parchment. Mix flour, butter, sugar, and salt; press into pan. Bake 15 minutes.
  • Toss peaches with sugar, cornstarch, lemon juice, cinnamon, and nutmeg; let sit 5 minutes.
  • Combine flour, oats, brown sugar, and salt. Cut in butter until crumbly.
  • Spread peaches over crust. Top with streusel. Bake 35-40 minutes until golden.
  • Cool 30 minutes. Cut into bars. Dust with sugar and serve with cream.
