For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter softened
- 1/4 cup granulated sugar
- 1/4 tsp kosher salt
For the Peach Filling:
- 4-5 ripe peaches peeled, pitted, and sliced (about 4 cups)
- 1/4 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
For the Streusel Topping:
- 3/4 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/3 cup packed brown sugar
- 1/4 cup unsalted butter cold and cubed
- 1/4 tsp kosher salt
For Garnish (Optional):
- Powdered sugar dusting
- Whipped cream
Preheat oven to 350°F. Line 8x8-inch pan with parchment. Mix flour, butter, sugar, and salt; press into pan. Bake 15 minutes.
Toss peaches with sugar, cornstarch, lemon juice, cinnamon, and nutmeg; let sit 5 minutes.
Combine flour, oats, brown sugar, and salt. Cut in butter until crumbly.
Spread peaches over crust. Top with streusel. Bake 35-40 minutes until golden.
Cool 30 minutes. Cut into bars. Dust with sugar and serve with cream.
