Cook sausage, onion, and garlic in a skillet over medium for 6-8 minutes until browned. Drain fat.
In a saucepan, combine honey, soy sauce, vinegar, garlic, ginger, chili flakes, and salt; simmer 2-3 minutes until thickened.
Spoon sausage over sweet potatoes; drizzle with glaze. Sprinkle with feta, parsley, and green onions.
Serve hot with a side salad or vegetables.
