Ingredients
  

For the Sweet Potatoes:

  • 4 medium sweet potatoes about 2 lbs
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

For the Sausage:

  • 1 lb Italian sausage mild or spicy, casings removed
  • 1 small onion finely chopped
  • 2 cloves garlic minced

For the Honey Garlic Glaze:

  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic minced
  • 1 tsp grated fresh ginger
  • 1/4 tsp red chili flakes optional
  • 1/4 tsp kosher salt

For Garnish (Optional):

  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped green onions
  • 1/4 cup crumbled feta cheese

Instructions
 

  • Preheat oven to 400°F. Wash sweet potatoes, pierce with a fork, rub with olive oil, salt, and pepper; place on a parchment-lined baking sheet.
  • Bake sweet potatoes for 35-40 minutes until tender. Slice open and fluff insides.
  • Cook sausage, onion, and garlic in a skillet over medium for 6-8 minutes until browned. Drain fat.
  • In a saucepan, combine honey, soy sauce, vinegar, garlic, ginger, chili flakes, and salt; simmer 2-3 minutes until thickened.
  • Spoon sausage over sweet potatoes; drizzle with glaze. Sprinkle with feta, parsley, and green onions.
  • Serve hot with a side salad or vegetables.
