Ingredients
  

For the Filling:

  • 1 lb ground turkey 93% lean
  • 1 can 15 oz black beans, drained and rinsed
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro

For the Enchiladas:

  • 8 low-carb corn or flour tortillas 6-inch
  • 1 can 10 oz enchilada sauce, low-sodium
  • 1/2 cup shredded reduced-fat cheddar cheese

For Garnish (Optional):

  • 2 tbsp chopped green onions
  • Plain Greek yogurt or light sour cream
  • Lime wedges

Instructions
 

  • Cook turkey, onion, and garlic in skillet 5-7 minutes. Add spices, salt, pepper, and beans; cook 2-3 minutes. Stir in cilantro.
  • Preheat oven to 375°F. Warm tortillas. Fill each with 1/4 cup mixture; roll and place in greased 9x13-inch dish.
  • Pour sauce over; top with cheese.
  • Bake 20-25 minutes until bubbly.
  • Garnish and serve.
