For the Shrimp:
- 1 lb large shrimp peeled/deveined
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp lime juice
For the Salad:
- 6 cups romaine lettuce chopped
- 2 avocados diced
- 1 cup cherry tomatoes halved
- 1 cucumber sliced
- 1/4 red onion thinly sliced
- 1/4 cup cilantro chopped
For the Lime-Cilantro Vinaigrette:
- 3 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp honey
- 1 clove garlic minced
- 1/4 cup cilantro chopped
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Toss shrimp with oil, garlic, paprika, salt, pepper, lime juice. Cook in skillet 2-3 minutes per side until pink.
Whisk vinaigrette ingredients until emulsified.
In large bowl, toss romaine, avocado, tomatoes, cucumber, onion, cilantro with vinaigrette.
Top with shrimp. Garnish with lime wedges.
Serve immediately.
