Ingredients
  

For the Shrimp:

  • 1 lb large shrimp peeled/deveined
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp lime juice

For the Salad:

  • 6 cups romaine lettuce chopped
  • 2 avocados diced
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/4 red onion thinly sliced
  • 1/4 cup cilantro chopped

For the Lime-Cilantro Vinaigrette:

  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 clove garlic minced
  • 1/4 cup cilantro chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions
 

  • Toss shrimp with oil, garlic, paprika, salt, pepper, lime juice. Cook in skillet 2-3 minutes per side until pink.
  • Whisk vinaigrette ingredients until emulsified.
  • In large bowl, toss romaine, avocado, tomatoes, cucumber, onion, cilantro with vinaigrette.
  • Top with shrimp. Garnish with lime wedges.
  • Serve immediately.
