Ingredients
  

For the Salad:

  • 4 cups crumbled cornbread homemade or store-bought
  • 1 can 15 oz black beans, rinsed and drained
  • 1 cup frozen corn thawed
  • 1 cup cherry tomatoes halved
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped (or parsley)

For the Buttermilk Dressing:

  • 1/2 cup buttermilk
  • 1/4 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Garnish (Optional):

  • 2 tbsp shredded cheddar cheese
  • 1 tbsp chopped fresh cilantro

Instructions
 

  • Crumble cornbread into small pieces in a large bowl.
  • Whisk buttermilk, mayonnaise, apple cider vinegar, garlic powder, salt, and pepper in a small bowl.
  • In a serving bowl, layer half the cornbread, black beans, corn, tomatoes, bell pepper, onion, cheese, and cilantro; drizzle with half the dressing.
  • Repeat layering with remaining ingredients and dressing.
  • Garnish with extra cheese and cilantro; chill for 15-30 minutes.
  • Serve cold or at room temperature.
