Ingredients
  

For the Filling:

  • 1 lb flank or sirloin steak thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 small onion thinly sliced
  • 2 cups shredded cheddar or Mexican blend cheese
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lime juice about 1/2 lime
  • 4 large flour tortillas 10-inch

For Garnish (Optional):

  • 2 tbsp fresh cilantro chopped
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions
 

  • Heat 1 tbsp olive oil in a skillet; cook steak for 4-5 minutes until browned, then set aside.
  • In the same skillet, heat 1 tbsp olive oil; cook bell peppers, onion, chili powder, cumin, paprika, salt, and pepper for 5-6 minutes.
  • Place one tortilla in the skillet; add 1/2 cup cheese, steak, vegetables, and another 1/2 cup cheese on half, then fold.
  • Cook for 2-3 minutes per side until golden and cheese is melted.
  • Drizzle with lime juice; cut into wedges and repeat with remaining tortillas.
  • Serve hot with sour cream, salsa, or cilantro.
