- For the Salad:
- 4 cups seedless watermelon cut into 1-inch cubes
- 1 cup cucumber sliced into half-moons
- ½ cup crumbled feta cheese
- ¼ cup fresh mint leaves chopped
- ¼ cup red onion thinly sliced (optional)
- For the Dressing:
- 2 tbsp olive oil
- 2 tbsp lime juice fresh
- 1 tsp honey
- ¼ tsp salt
- ¼ tsp black pepper
- For Garnish Optional:
- Extra mint leaves
- 2 tbsp crumbled feta cheese
Cut watermelon into 1-inch cubes and place in a large mixing bowl. Slice cucumber into half-moons and add to the bowl.
Sprinkle feta cheese and chopped mint over the watermelon and cucumber. Add red onion, if using.
Whisk olive oil, lime juice, honey, salt, and pepper in a small bowl until smooth.
Drizzle dressing over the salad. Toss gently to coat evenly.
Taste and add more lime juice or salt if needed. Serve chilled with extra mint and feta, if using.
