Ingredients
  

  • For the Salad:
  • 4 cups seedless watermelon cut into 1-inch cubes
  • 1 cup cucumber sliced into half-moons
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves chopped
  • ¼ cup red onion thinly sliced (optional)
  • For the Dressing:
  • 2 tbsp olive oil
  • 2 tbsp lime juice fresh
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp black pepper
  • For Garnish Optional:
  • Extra mint leaves
  • 2 tbsp crumbled feta cheese

Instructions
 

  • Cut watermelon into 1-inch cubes and place in a large mixing bowl. Slice cucumber into half-moons and add to the bowl.
  • Sprinkle feta cheese and chopped mint over the watermelon and cucumber. Add red onion, if using.
  • Whisk olive oil, lime juice, honey, salt, and pepper in a small bowl until smooth.
  • Drizzle dressing over the salad. Toss gently to coat evenly.
  • Taste and add more lime juice or salt if needed. Serve chilled with extra mint and feta, if using.
